Can I ask for a Favor?

It's that time of year again. I'm going to act like I know what I am talking about here. Each year ISOC does a poll for Fan Favorite Racer Poll. If you would be so kind please vote for Levi LaVallee. He is a small town Minnesota boy who races snowmobiles for a living. I can honestly say I have never met someone who is so humble and down to earth like he is, especially for being famous.

If you could be so kind please go to:

http://www.isocracing.com/2012/03/04/fan-favorite-racer-poll/ and simply click the little circle by Levi LaVallee and scroll down to the bottom and click "vote" :) You can vote once each day and it goes on until March 13th!

Here are some fun videos of Levi if you don't know who he is:

A yummy treat from me to you!

I haven't blogged in quite some time. While I finally have some time I thought I'd do a couple posts!

Last Monday I had a fabulous dinner with my best friend's mom and his sister! We made this delicious dinner that I'd thought I'd share the recipe. YUM!

Ginger Chicken with Sweet-Salty Noodles

Ingredients

Salt
1 pound thin long cut pasta, such as capellini
5 tbsp vegetable oil
½ cup flat leaf parsley
½ cup fresh cilantro leaves
1 large garlic clove, smashed
¼ large onion, cut into chunks
3 inch piece ginger, peeled and grated

Black pepper
1⅓ to 1½ pounds chicken breast cutlets, 8 thin pieces
½ cup rice or white wine vinegar
1½ tbsp sugar
3 tbsp tamari
¼ tsp red pepper flakes
1 seedless cucumber, cut in half lengthwise, then thinly sliced into half moons
1 red bell pepper, cored, seeded and thinly sliced
1 yellow bell pepper, cored, seeded, and thinly sliced
3 scallions, thinly sliced
1 12-ounce sack triple washed baby spinach

Directions

Preheat a grill pan or outdoor grill on high.
Bring a large pot of water to boil for the pasta, salt the water and add the pasta. Cook according to package directions until al dente. Once cooked, drain thoroughly.
In a blender or food processor, combine 3 tbsp of vegetable oil, parsley, cilantro, garlic, onion, 2/3 of the grated ginger, and salt and pepper. Blend until mixture is somewhat smooth. Transfer mixture to shallow dish, add the chicken cutlets, and coat them thoroughly. Let chicken sit a few minutes.
While the pasta cooks and the chicken marinates, place a small suacepan over medium-high heat, add the rice wine vinegar, sugar, tamari, red pepper flakes, and remaining ginger and bring them up to a bubble to dissolve the sugar. Once the sugar has dissolved, remove the sauce from the heat and stir in the remaining 2 tbsp vegetable oil. While it is still hot, transfer the sauce to a large salad bowl, add the cucumbers, red and yellow bell peppers, and scallions. Toss to combine.
Add the pasta to the dressed cucumbers and bell peppers, add the baby spinach, and toss to combine. Cover with foil and reserve covered to keep the noodles warm and wilt the spinach while you grill up the chicken.
Grill the ginger and herb coated chicken for 3 minutes on each side, or until it is cooked through and the juices run clear. Cut into thin strips. Divide the noodles and veggies among serving plates and top them with a pile of the grilled chicken.

Enjoy! :)

Family Therapy 101

You know you're in an amazing class when the only thing you want to do when you get home is share the knowledge you just gained with anyone who will listen.

I'll assume you as a reader will listen ;)

In my Wednesday class I am in a Marriage and Family Counseling class. Let me tell you, this class is so informational, and hilariously enjoyable. Basically in a nut shell we talk about what a "healthy family" is, as well as dysfunctional families. The stories we hear about are so crazy sometimes, that you just can't help to think "wow my family is so not crazy!"

Anyways, today we were talking about divorce and how it is so easy to see when a marriage is about to corrupt and how it normally takes 6 years before a couple will honestly try to work on their marriage, and sad to say...it is far too late.

On the positive side, we talked about how to have a healthy marriage! Some pointers go as follows:
1. Define boundaries with the in-laws. Notice this is rule number one....this is also one of the number 1 reasons why couples divorce.
2. Define yourself as a couple, as well as find your own self. Having separate interests is important.
the list actually names 9 but my favorite and most important one is ... allow yourself to laugh with the one you love. For example, if your significant other tells a joke that they find extremely funny.... laugh also. Just because you're laughing doesn't mean you are laughing with them... you actually may be laughing AT them...This is okay, just don't tell them ;)

Or a common example people say is "if you mess it up enough times they won't ask you do to that specific thing anymore" I like that idea. If only M would think my back massages sucked so then I would never have to give another one again.

My professor said the most important rule though to a successful marriage is this:

·The innermost core of the relationship is by drawing sustenance and renewal from the images and fantasies of courtship and early marriage and maintaining that joyful glow over a lifetime. Intimacy is about narrowing the gap.You have to keep your emotional connection alive and well!

While I am by no means a psychotherapist yet, I thought I'd share some tips I recently learned! :)

Words of Wisdom

Happy Monday!

It's been a little over a month since I've blogged last. Quite frankly, while I have been super busy, I truly haven't blogged because I have had nothing to say.
I am currently running from one direction to another to live this crazy thing I call my life. Working nights, going to class in the early afternoon until evening and making sure I get a good workout in daily has left me empty.

On my twitter account my bio reads: "Workout Addict, Sports Fanatic, Dream Chaser, BIG believer! Lake life living, marathon runner. Be a friend of mine and I'll share some wisdom with you." Okay, here is where my title comes into play. I read a lot of different blogs from people all over. While reading some I often wonder "wow where do I sign up?" It's a funny thing, I think most the people whose blogs I read are similar in age, yet its crazy how different peoples lives are.

My "words of wisdom" are often preaching to my friends to do what their dreams are calling them to do. Yet here I am currently struggling with the concept of "Grad School is the next step to accomplishing my dream." While Grad School is the smartest decision I've made all of my life, I often times get lost in the thoughts that scream "You don't have to do this! You don't have to suffer" but where would that get me... no where. Why is it that you can preach to others, yet when you listen to your own advice it never is clicking to make that "ahh huh!" moment? Ugh! I never thought I'd be stressed out to the max. Sometimes quitting and giving up sounds so much easier and better....yet, I know it's not.

I found this quote tonight while laying in bed listening to music. It goes as follows:

"Life is an opportunity, benefit from it. Life is beauty, admire it. Life is a dream, realize it. Life is a challenge, meet it. Life is a duty, complete it. Life is a game, play it. Life is a promise, fulfill it. Life is sorrow, overcome it. Life is a song, sing it. Life is a struggle, accept it. Life is a tragedy, confront it. Life is an adventure, dare it. Life is luck, make it. Life is too precious, do not destroy it. Life is life, fight for it." — Mother Teresa

With that being said, giving up just isn't an option. My brother once told me this... "The more difficulties one has to encounter, within and without, the more significant and the higher in inspiration his life will be." -Horace Bushnell.

All I can say is, hurry up August 2013... offta!

Have a good day!

The best is YET to come

Happy New Year to all of you!

First off I hope you all had a great Christmas and were blessed with family, laughter and joy. I know I sure was! :)

Secondly, Happy New Year! How many of you made the famous "New Year's RESOLUTION" for the year 2012?! I did! While mine were simple, I look forward to making my resolutions happen! For those of you who made the most common one of all- "to lose ___ pounds" (you fill in the blank) I have words of encouragement for you. I found a quote that says as follows:
"It takes FOUR weeks for you to notice your body changing. EIGHT weeks for your friends to notice, and TWELVE weeks for for the rest of the world to notice. Give it TWELVE weeks (hopefully a new lifestyle change) but.... Don't quit!" A goal without a plan is just a wish! Best of luck to all you dieters out there.
My own piece of advice is this- a diet is not a diet, rather a change of healthy eating and active lifestyle. A diet isn't a change for the world to see, but for you to feel/see for yourself- be comfortable in your own skin... be confident! The world who sees a confident person wants to be that person. Working out doesn't have to be a "chore" if do activities that are FUN! Yes, FUN! If you do things that you enjoy it won't seem like a cruel and punishing task!

"We are what we BELIEVE we are!"

My New Year RESOLUTIONS are as follows:
1. Do my first TRIATHLON (May 2012)
2. Run a HALF marathon (April 2012)
3. Run a FULL Marathon (October 2012)
4. Follow my OWN dreams, and to NEVER give up.
5. SEEK my OWN happiness.
6. SHOW the ones I love, the love I have for them ALWAYS!
7. Make a difference in ONE person's life... okay TEN or more.
8. Dance when it RAINS, when it POURS, and when it STORMS. Life is only as bad as you make it.
9. SUCCEED in Grad School and get the best and most out of it that I can!
10. LEARN new things daily.
11. FIND what makes ME happy!

While I think these are quite simple, I hope I can follow through with all of these. This year is my year to FIND who I truly am. I have done so much in the past to do what makes the OTHERS around me happy. I am stubborn, and like to make others happy. However, this year while I hope to continue to be stubborn and make others happy, I hope to do things that truly make ME happy. I look forward to all of the adventures life takes me on this year, and can only shoot for the moon, and hope I land on a few great shining stars.

I hope all of you have a great 2012! Best of luck to all of you and your NEW resolutions. May they lead you to happiness and success! :)

Much Love,
-K

Just in time for Christmas

Happy Wednesday!

I'm in a blogging mood, so I figured I'd get one in before Christmas.

First off, I am proud to say that my cousin, second cousin to be exact just landed on American soil after sacrificing so much of his life for our freedom! I personally don't think the timing could have been any better! What a welcome home just in time for Christmas! Not only did he sacrifice his life, he missed out on so many moments of watching his three baby girls grow up. I cannot even imagine what type of homecoming it will be, I imagine it being fairy tale like, which shoots shivers up my arms!

With that being said, I think we should reflect on all of the courageous men and women that have sacrificed their lives to bring us peace and freedom and thank them not just on Veteran's day, but every day! While you celebrate the holidays with all your loved ones, military families don't always get do so. Be thankful for your family and loved ones!

How many of you made "Christmas List's" of the things you wanted this Christmas? Be honest! It's okay! My "list" was super hard to come up with this year. I remember being a little kid and could think of numerous things to get. However, this year I feel I have everything. I am so blessed to have the most amazing family, and to be in closer proximity to them again. I am so excited that my family gets to be together, so in all honesty my biggest Christmas wish would be to have what I have now for the years to follow!! I truly have it all! What more could a girl ask for?! While I wish that each one of you has a list of something that would be truly special for you, take time to remember the simple things, you never know when you could lose them...

On a happy note here, I finished up my first semester of Grad School, but the free time seems weird to me now...oh boy! I am proud and extremely excited to say that I rocked 3 A's and a B this semester, which I felt I worked super hard for. I suppose having no social life pays off in other ways... (I'll keep telling myself that).

I also switched jobs in November, well to a new floor anyways. I'm loving it. It is funny how one single person can ruin an experience for you. The nurses and manager on my new floor are so pleasant and fun to work with, and were so welcoming which made the transition ever so easy!

My life is good! :)

While I was reading my Bible today I came across a verse that reads:
"For I know the plans I have for you; plans to prosper you and not to harm you, plans to give you hope and a future. Then you will call upon me and come and pray to me, and I will listen to you. You will seek me and find me when you seek me with all your heart. I will be found by you." --Jeremiah 29:11-14 ♥
I don't think this could have been any more perfect for me. As I reflect on the past year there have been many negatives, however I do know the Lord has great plans for me, and this semester of grad school was a little sign from above I believe! I look forward to what the future holds for me and I'm not stopping until I reach my dreams!

My wish for you for the rest of the week is to turn up the Christmas tunes as loud as you can, sing out loud and enjoy the moments with your family! You'll remember them for a lifetime, and I can assure you that your children will too! My memory of this is with my family going to go cut down a Christmas tree and we would listen to Christmas songs the whole way there and the whole way home, it is a memory I will always cherish. :)

Here are my top 5 Christmas songs EVER.... EVER... EVER!!

there is hope! ;)

Merry Christmas to you all, I wish you many blessings, laughter and love this holiday season!

God Bless you all!

I may be blunt, at least I have manners.

Good morning!

In effort to make some people laugh, I will describe my 8 hours at work last night. Yikes!
This comic above just cracks me up!

It amazes me what comes out of some people's mouths these days. Where were the parents to help guide individuals into mature classy adults?! Apparently absent, that is my only conclusion. After my night I had at work I am now questioning why I want to help people psychologically, while rather maybe I should teach them manners and English... hm.. perhaps I'm on to something! ;)

To start my shift off, I was walking down the main hall in the hospital and a "fella" said to me in passing "dammn GURRRRL shake whatchya mamma gave yUH!" I turned and looked at him and said "Excuse me? That was rather rude, my mom doesn't have an ass." and kept walking. Honestly, where do people find comments like this acceptable? You're at a hospital, not a strip club. While most patients are merely clothed, this is still not a strip joint. It is a hospital.
For those of you who don't know... the hospital is in the heart of the ghetto! I mean...realistically we get every thug from every 2 block radius. While not every patient is a "thug" the "thugs" seem to think they run the hospital. Hello!! Some people are actually paying for their stay here and are honestly sick.... (wait, is that too honest? Whatever, it is the TRUTH!)

Another incident from last night. A call light goes off for a patient that was not mine, however I like to help people so I answered the call light. Boy was that a mistake. I walk in "Hi! Can I help you with something?" The man replies " B!tcH get me god damn pain meds, now" I just froze, stunned.... what part of my "Hi! Can I help you with something" sounded like "Hi! I'm you bitch, I'll take your order now" people, common sense here, you respect others you shall get respect in return. People that treat me like that automatically annoy me. Where are your manners?! As this man continued to throw many more rude inappropriate words towards me I walked out with no intentions of helping him. We later had to call a "code green" on him because he was throwing his phone, urinal, table, and even a chair at the nurse.... really.... really?....Really?!!! Grow up! I feel so bad for other patients that need to hear and see such rude and immature behaviors.

Again another incident, I was going to go to the bathroom and the aid who talked more ghetto than what I'd imagine people in the Bronx talk like says to me as I'm walking into the bathroom "ahhhh gurrrl yuh betta not go in dur I shit real bad!" I turned and looked at her with my eyes I'm sure just massive, "WHAT?!" I asked, did I really just hear her right?! haha she goes "I shit in there, stinky real bad" Oh my goodness. I just about died. I am not one who ever likes to talk about pooping, so this was just so not something I needed to know. However, since it was the only bathroom available I took one for the team and took a deep breath before entering and went to the bathroom as fast as I could. I'd imagine the huge sigh of breath I made after exiting the bathroom was heard by her around the other side of the hall.

Cripes the things I see and experience as an everyday basis at the hospital. So my only advice for people who may have to experience a stay in the hospital.
1. Get a private room
2. Don't expect much
3. Don't expect much quietness
4. Be NICE
5. Be RESPECTFUL
6. Understand that you are NOT the only patient being cared for
7. Appreciate the help we give you, especially if we are genuinely being nice.
8. Do NOT hit on your nurses, aids, or doctors...its really creepy! That is all for today, hope you have a better day with more manners than I received!
